How can you tell good stainless steel?
The nickel is the key to forming austenitic stainless steel.
So the “magnet test” is to take a magnet to your stainless steel cookware, and if it sticks, it's “safe”—indicating no nickel present—but if it doesn't stick, then it's not safe, and contains nickel (which is an austenitic steel).
What are the common disadvantages of stainless steel?
- It can be very expensive.
- It is not as durable as some other materials.
- It can be difficult to clean.
- It is susceptible to scratches and dents.
- It is not magnetic, so it cannot be used with magnets.
